The Recipe: Black Bean Quinoa Chilli

Here’s the star of the show, our Black Bean Quinoa Chilli recipe:

Serves 4

Ingredients:

  • 1 tbsp. olive oil
  • 1 red onion, chopped
  • 1 clove garlic, minced
  • Salt & black pepper
  • 1 tsp. smoked paprika
  • 1 tsp. ground cumin
  • 1 tbsp. tomato paste
  • 3.5 oz. (100g) dry quinoa
  • 1x 14 oz. (400g) tin chopped tomatoes
  • 2x 14 oz. (400g) tins black beans, drained & rinsed
  • 14 fl oz. (400ml) water
  • 1 tbsp. almond butter

To serve:

  • ½ lime, juiced
  • 4 tbsp. cilantro, chopped
  • 1 avocado, sliced

Instructions:

  1. Heat the olive oil in a pot over medium–high heat. Add the onion and cook, stirring frequently for 5 minutes. Now add the garlic, season with salt and black pepper and cook for a further minute.
  2. Add the paprika, cumin and tomato paste to the pot, stir to combine and cook for 1 minute. Then add in the quinoa, tomatoes and black beans.
  3. Fill an empty can with water and stir into the chili. Cover the pan and leave to simmer for 30 minutes, stirring occasionally.
  4. Once the quinoa is tender and the liquid has been absorbed, turn off the heat and stir through the almond butter.
  5. Divide the chili into 4 bowls and serve with a squeeze of fresh lime juice, fresh cilantro and sliced avocado.
